Candied Orange Peel for Days

So easy you'll impress your friends...and yourself!
I have been wanting to make some candied orange peels forever. We have the best orange tree and I have a hard time coming up with recipes other than marmalade, so this was perfect!
The recipe is literally foolproof.
Ingredients:
3 medium oranges
2 cups of sugar
2 cups of water1. Wash the oranges and cut off a little from either end. Score them in four vertical sections and then slice the peels into 1/4" pieces.
2. In a saucepan combine 2 cups of water and 1 cup of sugar. Bring to a boil. (Reserve the second cup of sugar for later.)
3. Once the sugar is dissolved add the orange peels and simmer for 45 minutes. Be sure to stir the mixture and watch to make sure it does not burn.
4. Remove from heat and drain the liquid. Let sit for 15 min. Place the peels in a bowl and coat with the remaining cup of sugar.
5. Spread on a Silpat mat (you can find this in my shop here) and let sit for 24 hours.
These make the cutest little gifts and taste really yummy. You can get the bags pictured on my Etsy if you would like a little DIY project :)
Now if bitter orange peel is not your thing, you can dip them in melted chocolate once they have set up.
Everything is better with chocolate, right?
I picked up a bag of the Dark Chocolate Wilton Melts from Joann Fabrics. Super simple, just pour them in a microwave safe bowl and cook on 50% power for 1 minute. Dip and let sit for a couple of minutes on your Silpat and voila, a great gift and treat.

NOTE: These peels should last two months in a sealed container. Unless of course your family devours them before then. Enjoy!
